Best Chunky Guacamole Recipe

If ever there were something that I could eat for breakfast, lunch and dinner AND it would be deemed acceptable, it’s this recipe right here–chunky guacamole. It breaks the mold of a traditional guacamole to add a little oomph in it’s appearance and taste. Because it is so light and refreshing, I wasn’t joking about the eating all day part–you’ll see why when you make it. My kids love it, it disappears at parties and makes your tummy thank you.


Yields 3-4 Servings
  • 4 Avocados
  • 1/4 Red Pepper, Diced
  • 1/8 Red Onion, Diced
  • Fresh Cilantro, A Few Sprigs
  • 1/3 Cup Italian Dressing (or homemade, recipe below)
  • Medium to enjoy it with: Organic Tortilla Chips, Toast Or A Plain Ol’ Spoon.


Peel four avocados by cutting in half, twisting to separate, then start peeling from side by hand. Cut avocados into cubes.  Dice 1/4 of a red pepper and 1/8 of a red onion. Remove cilantro leaves from stems and if you’d like, chop or tear to smaller size. Place ingredients in bowl and then top with approximately 1/3 cup of Italian dressing. Enjoy fresh or refrigerate for a few hours, then serve.

The onions and oils/acidity combination in the dressing keep the avocados from browning! That same combination also soften the avocados to make them feel like butter. FYI…My kids can’t get enough of this, hence the larger recipe volume. You can use two avocados for a self-portion and cut ingredients in half if needed.


Something I’ve adapted from the first time I made this was making my own dressing and/or concoctions. For example, you can just use the dressing with salt and pepper, add in some lime juice for extra punch, or use a little oil and your toppings of choice. If you’d like to make your own Italian dressing, here’s how I do it:



  • 1 Cup Oil Of Choice (Olive, Avocado, etc)
  • 1/3 Cup Vinegar, May Sub In Your Favorite
  • 1 Clove Garlic, Minced
  • 1/2 Tsp Red Pepper, Minced
  • 1 Tsp Dried Basil
  • 1 Tsp Dried Oregano
  • A Few Pinches Of Salt & Pepper Seasoned To Taste.

Combine all ingredients in large jar, shake well and serve. I prefer to let it refrigerate for a few hours to develop more depthy flavor.
