My husband loves meatloaf–if I made it once a week with mashed potatoes he would be in heaven. I kinda don’t like {dislike} meatloaf a lot. Something about the word “loaf” and “meat” together, just throws my whole foodie senses off. Take away the loaf part and make them in cups–well you’ve got yourself a done deal. 

I try to make dinner MondayThursday and it kinda bothers me when I don’t get to. It’s a kind stress relief for me, and it lets me stay in my yoga pants instead of getting ready to go out to eat. On this particular day we had a doctor appointment after nap and my husband had a softball game at 7:00. Doesn’t leave much time to prepare a home cooked meal. During nap, I pulled out the ground turkey, mozzarella, spinach, and sundried tomatoes. With these ingredients I chose to make meatloaf in muffin tins, hence the name Mozzarella Turkey Cups. 

Making meatloaf in cups has its perks! They are perfectly portioned, and easy for lunches the next day or even freezer meals for another night. This definitely isn’t your mama’s meatloaf–but hey there’s a time and a place for that. 😉 

Mozzarella Turkey Cups
Serves: 12 cups

INGREDIENTS
2 eggs
1 pound of turkey
1/3 cup sun-dried tomatoes, drained and chopped
1/4 cup fresh spinach, chopped
6 oz fresh mozzarella
1 tablespoon of garlic
1/4 teaspoon of basil
1/4 cup panko break crumbs
1/4 cup marinara sauce

INSTRUCTIONS
1. Preheat oven to 400 F. 
2. Beat the eggs in a large mixing bowl. Mix the remaining ingredients (except marinara sauce) until all combined. 
3. Grease a 12 cup muffin pan and divide the turkey mixture evenly. 
4. Spoon marinara sauce on top of each turkey cup. 
5. Bake in the preheated oven until the turkey is cooked through, 30 minutes. 
6. Serve with broccoli and red potatoes.
