Eating Stuffed Cranberry & Orange Pancakes For The Holidays

Thanksgiving has come and gone and you know what that means?! CHRISTMAS! It’s officially ok to break out the carols, mistletoe and holiday yummies. I wasted no time getting creative with some new recipes and this one will have you in the mood to watch Christmas Vacation, every Hallmark movie marathon and wrap twenty gifts at the same time. We’ve partnered with Real California Milk to bring you delicious stuffed pancakes with cranberry buttercream filling and orange syrup. Plus, we are sharing about their Spot The Seals For Good campaign below and how they help those displaced by the recent hurricanes in Florida and Texas along with the California wildfires.

​[Makes 15-20 layered pancakes]

  • 2 Cups fresh cranberries
  • 1 1/2 Sticks of salted butter (1/2 for cranberry medium, 1 stick to room temp for buttercream)
  • 5 Cups powdered sugar
  • 1 Tsp vanilla extract
  • 2 Tbsp of heavy cream or milk
  • Your pick of buttermilk pancake mix
  • 3/4 Cups syrup
  • 1/2 Orange, juiced. Zest optional.

Instructions: On medium heat, cook down cranberries with 1/2 a stick of butter (we used salted butter made with Real California Milk) and set aside. Mix together the buttercream ingredients in a separate bowl: 1 stick of butter, powdered sugar, vanilla extract and heavy cream or milk. Mix until smooth, then fold in cranberries.

In a small bowl, combine the syrup and strained orange juice(or unstrained if normally a pulp lover) and set aside. If you are part of pancake soakers anonymous, you may want to double the recipe for this part. Even if you are not an orange fan day to day, this combination with the cranberries is a perfect. complimenting flavor.

​Nothing fancy about this part. Often times when doing one part of a recipe a little more fancy, I go semi-homemade on the other. Instead of making the pancakes from scratch, I went with my favorite buttermilk pancake brand and made per instructions, just mixing with water per the amount of mix ratio provided.

​The reason I completed the recipe in this order was to allow for assembling while the pancakes were warm. To make sure you maximize your butter cream use (hah!), alternating pancakes and buttercream is key. You can’t just top the stack with the icing and call it a day…no, go all in my friend! Top with syrup and if desired, orange zest from the juiced orange peel and enjoy!

    I am not sure how I feel about cranberries just yet!
    I got sent some a few months ago and baked a loaf with them, it was ok. Think I am going to try this though.

      They are nice and sweet in this recipe, especially because they were cooked down in butter hehe! Definitely worth a try if you’re on the fence about them since they compliment so well with the orange!

    These look so good! On a side note, I’ve never bought fresh cranberries before and I had no idea they looked like that on the inside! I guess I imagined them being more like a blueberry on the inside.
