Making Gourmet Grilled Cheese

It’s officially soup season, which also means it’s oh-so-cheesy gourmet grilled cheese season. It would be completely easy to unwrap a single slice of cheese and place it between two slices of bread and call it a day, but no, no, no…once you try this gourmet grilled cheese recipe, you’ll never go back. This is a favorite around our house for us and friends alike due to our choice of specialty cheeses and the Parmesan crust secret weapon. This recipe’s gourmet aspect courtesy of the beautifully aged Stella Cheeses. Their Fontinella, Shaved Parmesan and Italian 3 Cheese Blend were ooey gooey melty and full of good-for-the-soul flavor.

Tomato Soup With Gourmet Grilled Cheese Parmesan

Makes four sandwiches, but adjust to your cheese loving level.

Pre-warm your stove top to high heat. Assemble the cheese stack atop the first slice of bread using 2 slices of smoked cheddar, Fontinella then Shaved Parmesan. Top with second slice of bread, spread butter and sprinkle Italian 3 Cheese Blend on top, then press cheese to butter to help adhere. Flip over and repeat on other side. Place in pan to flash sear cheese on both sides, reduce heat to medium to continue to achieve melty goodness. Slice through when still warm (to appreciate the ooey gooey melty part of course) and serve with your favorite tomato soup. This gourmet grilled cheese recipe will definitely be added to your recipe repertoire.
