Hooked On Veggies

by: jenn landry

If you’re a busy momma like me, balancing daily household chores, running errands and working is hard enough as it is. Now throw in trying to plan a well balanced meal for children who are so picky! As much as I am reluctant to admit, I’m often finding myself ordering chicken nugget meals at the closest fast food restaurant on my way home from grocery shopping.

Feeling guilty that they weren’t eating enough greens, I was desperate! Big emphasis on the was part of that statement until I found these amazingly delicious, yet veggie packed on-the-go snacks great for everyone in my family. They are Garden Lites muffins. My favorite flavor they offer is the Blueberry Oat muffins and my husband and kids absolutely LOVE the Chocolate muffins. Of course, how could they not, when warmed up, the chocolate morsels are just so scrumptious. Think lava cake for only 120 calories!

Garden Lites products are not only yummy, but they are all veggie-rich with vegetables as the first ingredient. I’m sure we can all relate to our mothers telling us to eat our vegetables and if we had these muffins at dinner growing up, I would have never given her a hard time eating my veggies. Now with the shoe on the other foot, you bet I’ll be serving my kiddies these superfood veggie bites and I won’t even tell them they are eating something healthy for them! I’ll keep that little secret to myself, I won’t even tell my husband. They are also gluten, dairy and nut free while made of simple and clean ingredients, which I love.

You know what else I love about Garden Lites muffins? How seamlessly they fit into my busy mommy lifestyle! Perfect for tiny hands and big hands, too. They are yummy and chock full of healthy goodness, super easy for those times I am running late or need something on-the-go. All you do is pop them in the microwave while in the wrapper for 10 seconds on high if it’s defrosted or 35 seconds if it is frozen. They are also great at room temperature, just defrost them at room temp for 4 hours.

So if you are having the same struggles as I was, head on over to your nearest grocery store. I found my Garden Lites muffins at Publix! You can find yours in the freezer section of your nearest Publix, Stop & Shop, Giant, Shop-Rite, HEB, Kroger or Costco. Head here to save $1 on any ONE (1) Garden Lites product.

I am loving that there are so many healthy options available now, such as sweet treats that are actually packed full of vegetables! I’ve had to overhaul my diet recently because of food intolerance’s and it’s nice to still be able to eat food I enjoy like this, and not have to worry that I’ll get super sick!
